The Carillon is proud to support our local farms and ranches. Wherever we can, our seafood comes to us from the Gulf, our proteins come from the Hill Country, our dairy is Texan, and our produce is locally sourced. We proudly use: Farm to Table, Animal Farm, Honey Doe Farms, Houston Dairymaids, Mill King, Good Flow, G&S Groves, Johnson’s Backyard Garden, Texas Hill Country Olive Company, Texas Black Gold Garlic, Belle Vie Farms, Tender Belly, Benton’s Country Ham, & Hausbar Farm.
The greatest contribution to the event of a social gathering is the American cocktail. No other country can claim the art of blending spirit-sour-sweet-bitters-garnish as a means to ‘compose’ a balance of taste. The Sidecar, Jack Rose, Manhattan, Martini, Pegu, Aviation, and many others have defined ‘The Hour’ (i.e. cocktail hour) for generations. A finely crafted cocktail or Martini is a plateau of refinement that aides in the moment when one is just beginning to ‘finish’. For the start of an evening meal, is the perfect ‘overture’. Please enjoy a selection from the only classic cocktail program in Austin.
